The salty flavor moistens, detoxifies, softens stiffness, and improves concentration.

Sour stimulates absorption, stops leakage, and counteracts the effects of fatty foods.

Bitter drains, dries, and purges.

Pungent circulates, stimulates digestion, disperses mucous, and (in some cases) causes sweating.

Sweet energizes, relaxes, and strengthens.

A physiologically-stable diet contains all the flavors in balance.
